Tin Mill Brewing Co

Founded in 2005, Tin Mill Brewing Company occupies a historic downtown Hermann building that once processed grain. Its focus is authentic German-style beer, and brewers Derek LeRoy and Dalton Gillig make most of the lineup following the 1516 German Purity Law, a rule that still shapes brewing in Germany. Year-round staples include Skyscraper, a German-style pilsner made with all barley and cold lagered for close to six weeks, along with First Street Wheat hefeweizen, Red Caboose amber lager and Midnight Whistle, a dark Munich-style doppelbock. A rotating list of about 20 taps adds seasonal beers, and recent offerings have included a gluten-free cerveza, a bourbon barrel-aged stout, fruit seltzers and a locally made root beer for non-drinkers. The brewery serves food from its own menu, hosts events and sells gift cards online.
